Self-Care Tip: 3-Ingredient Healthy Snacks
/Healthy snacks help us to stay nourished and energized every day, especially during stressful times. However, it’s easy to reach for the same old things, which can get boring. While we are still under some degree of stay-at-home orders, you might try one of these 3-ingredient snacks to change things up!
Coconut-Pistachio Stuffed Dates:
Just slice a couple dates lengthwise, take out the pits, and sprinkle in some finely chopped pistachios and shredded coconut.

Ingredients:
4 medium ripe bananas (or 3 large)
3 tablespoons orange juice (or juice from 1 large lemon)
Cinnamon

Preheat oven to 200°F (warm setting). Line a baking sheet with parchment paper or a Silpat mat.
Peel the bananas and cut into 1/4-inch slices. Dip each slice into the orange juice and place on the pan. Sprinkle with cinnamon.

Remove from the oven, and once cool, chips can be stored in an airtight container.
